What might you find if you ate breakfast at my house?
Sometimes I make puff pancakes, or sausage and potatoes, but recently this has been on my menu.
Egg whites, served over fresh spinach with feta, balsamic vinegar, pepper and salt.
Served with coffee and a blueberry smoothie (no sugar).
What? You don't like vinegar on eggs? What's wrong with you? ...
I could eat this three meals a day- or egg whites with fresh salsa. (My kids will eat this too- but not everything together on the same plate)
Poor kids.
I keep them happy with McD's apple pie pockets once a week. (Shh..!)
On the culinary / nutrition topic...
This year I canned my own tuna!
Several ladies I know got together last month and packed jars with fresh caught tuna. We all brought our pressure canners so we could get this done as soon as possible. No one wants fish canning to be an overnight process.. It starts to make you do silly things.
Canning tuna at home might seem odd to you too, but if you have never had fresh canned tuna, it is a totally different experience than the Chicken of the Sea. I am very glad to have this on my shelf for as long as it will last.
OK..
I know I have said this before; but, it is worth repeating:
I ♥ FALL RUNNING.
Really loving these cozy arm warmers. *
They are inexpensive and make your summer tops work for winter.
Added bonus: No muffin-top on the biceps. :D
*super gift idea!
Laugh lines..
Worth every laugh!

How about you, runners?
Have any random favorites?
Interested in coming over for a little breakfast?-- Or tuna sandwiches?
I'll come over for breakfast as long as there is an endless supply of sausages, potatoes and coffee! Nice read by the way :)
ReplyDeleteHaha!! OK- we'll keep the coffee on :) No spinach for you.. Thanks Steve!
DeleteGreat post Raina. Thanks for letting know about some of your favorites.
ReplyDeleteThank you Fred! Hope you have a great week :)
DeleteMy fav breakfast; hashbrowns, one scrambled egg, bacon or sausage, toast with jelly and orange juice. Breakfast is my fav meal. I do love tuna, I'll bet fresh caught is awesome!
ReplyDeleteHash browns are pretty good, Bruce- as is bacon.. Always hard to say no to bacon! lol
DeleteSounds like you eat a hearty breakfast. No doubt you burn it off!
The breakfast looked amazing! And do all your friends just have those canners just sitting around? I've never even seen one. And I for sure didn't know there was some great secrete Canning Society. I wonder what other clubs are out there I don't know about.
ReplyDeletehaha. It's a not-so-secret society! Some of my friends have gardens and enjoy canning vegetables / meat / chili ... Actually, there probably is a club for it! 4H or Master Food Preservers or something like that.
DeleteThanks for the comment. Hope you have a great week.
Oh yes! I love tuna sandwiches! Wow, I would love to taste the fresh tuna. I need to visit you! One of my random favorites at the moment is chocolate ice cream :)
ReplyDeleteChocolate ice cream is hard to beat, Johann!
DeleteIf you get out here, do it in September so you can pick up your filleted tuna straight off the docks. We'll send you home with a suitcase full!
Your breakfast looks fantastic to me! It never occurred to me that one could can their own tuna. Wow!
ReplyDeleteThanks Marcia! I actually practiced on store-bought chicken. :)
DeleteI want to come over for breakfast!! I've had fresh canned salmon and it was amazing!! What a beautiful place to run!!!
ReplyDeleteI have not tried home canned salmon yet- but I bet that is amazing. I put some smoke flavoring in a few jars of the tuna and it was really good. I think I would try that with salmon too!
DeleteThis looks yummy Raina! Seriously. And you look happy, fit and beautiful. This makes me happy. Beautiful view from your tuna canning, I bet you can see for miles...right?
ReplyDeleteSadly that is not my deck! My friend hosted the canning party so that is the view off her back porch- But it's a good one :)
DeleteSo glad to hear from you, Amanda!
Hey you!! First of all, your breakfast looks HEAVENLY. I love balsamic vinegar. I could drink it:) Spinach and egg whites are flying out of this house right now too!!
ReplyDeleteI can imagine that fresh caught tuna canned is amazing. I LOVE tuna. Love it on salad or just with a fork!
You look beautiful! Laughing at the laugh lines because in the picture I just posted of myself, the first thing I noticed was laugh lines. Funny, how I never would have noticed them on you in this picture! All I see is your smile.
So glad you're running and loving it again. XOXO
Yes, another gasp at your running playground......so jealous:)
I definitely need to arrange a breakfast with you.. We could drink vinegar with our feta block, and you can fill me up with all your generous compliments :D
DeleteLove you, Jenn. You will be beautiful even at 93 !
Wow, I've never canned anything in my life and sure wouldn't even know that you could can tuna yourself...I mean I guess why not, I've just never heard of anyone doing it before. That's pretty cool. I wish I like eggs...I try and try, and keep buying them and telling myself to eat them and enjoy them, but I just hate them...really hate them.
ReplyDeleteBeautiful fall pictures!
I admire your honesty, Michael! lol
DeleteNo eggs for you :)
FWIW Canning meat and fish is much easier than I expected it to be, if you ever decide to take up the hobby! :)
You can come make me breakfast anytime you want! That looks amazing!
ReplyDeleteI love fall running too, something about being a little cold but not freezing and not overly hot. Perfect conditions!
Sounds good, Laura :)
DeleteGlad you are enjoying the season. It is PERFECT for running. Have a great week!
I have those arm warmers and I'm with you - they rock.
ReplyDeleteI can with my sisters in law every year, but you've got us beat! We only use up to four canners at a time. I've never done meat, but my girlfriend does it all the time and I may give it a go next year.
Fall is such a beautiful time to be outdoors! Especially when the weather cooperates!
You need to try canning meat. It's almost easier than fruit because you don't have to worry as much about the jars- you can pack them cold and the jars need to be clean, but will self sterilize due to the heat/time cooking. I used frozen chicken breasts the first time and just followed the book! Just don't do beans unless you pre-soak them :D ..
DeleteSomehow I think you might have a few pairs of the arm warmers! haha
That breakfast looks amazing!
ReplyDeleteI use to love those McDonald's apple pies when I was a kid. Yum!
Fresh canned tuna sounds fantastic compared to the processed stuff. Cool idea to all can together and make a party out of it.
I love fall running too. Crisp air, leaves changing.
We are all getting facial lines. We can choose happy lines or grumpy lines. You've chosen the right ones :-)
Thanks Mike! I hope you are getting in some great fall running.
DeleteFunny about the lines. I have been trying to ignore them for some time. But, I finally gave up because I am sure not going to quit smiling! :D
My parents used to can a lot when I was a kid, but the whole process was so miserable that I swore I'd never do it. However... if you turned it into a social event.... hmmm
ReplyDeleteI love arm warmers! I have 3 pairs from light to heavy so that I can continue to run in my singlets all year long!
I think it could be miserable if I tried on my own, but i have this friend who LOVES doing it. She's organized, yet easy going. Her approach won me over :)
DeleteHope you are having a great week!
Hi Raina! Thanks for stopping by my blog...I love fall too, it's my absolute favorite season. And courgette = zucchini - thanks for pointing that out, I'll add it to the recipe. If you decide to make it, I hope your boys enjoy it!
ReplyDelete:) The recipe looked great! Thanks for letting me know about the zucchini. That makes sense.
DeleteHappy running to you!
In answer to your question: My 10km would definitely be for fun only. In fact, there is a church on the route that opens its doors so runners can go in and say thank you during the race. I plan on doing that for sure! I ran my best 10km in 1997 - 47:13.
ReplyDeleteThat will be a good aid station stop, Johann!
DeleteEnjoy the fun run and thanks for coming back to answer :)
I like vinegar on anything! I'll have to try that.
ReplyDeleteI love fall running too. It's been just amazing here, maybe the prettiest fall I can remember since moving to CO in 2002. Being a runner is the best way to enjoy it.
Looks like we need to get together for Lunch, Terzah :)
DeleteHope you are taking lots of pictures!
Thanks for popping over! Breakfast looks amazing! Thanks for sharing such gorgeous pics! I live in the desert (Arizona) so I run on sand and dirt, hardly any trees or water here!! Arm warmers are on my shopping list, I wear tank tops year round, so these would be perfect for early morning runs! have a great week!! Carri~A Running bee
ReplyDeleteWhat a totally different landscape you get. But still very beautiful!
DeleteThanks for coming by to read and comment!
The photo where you run in the wood is wonderful. It is an inspiration and looking at that scenery I understand why I love running.
ReplyDeleteAbout food... I don't like seafood, what a pity!
I can't believe you don't like seafood, Stefano! For your navy experience that seems funny :)
DeleteWow! I'm so impressed that you canned your own tuna! We've done some canning but usually tomatoes (salsa, sauces, etc). Love those arm warmers!
ReplyDeleteYou will have to try it sometime. You would love the time it saves in the long run.. to just have chicken or beef, etc.. ready to make enchiladas or stews. Very handy!
Deleteso neat that you can your own tuna!! having canned meats on hand is SO helpful! :)
ReplyDeleteI completely agree! Thank you so much for commenting today :)
DeleteWow! Sounds good to me! Sign me up for that exact breakfast AND a tuna sandwich for lunch!
ReplyDeleteYum Yum.
Next marathon we meet up at I will bring you a jar, Paul. Unless I have eaten it all.. I will try to keep one saved :)
DeleteLaugh lines? Pleaaaaaasssse! Just wait 'til you're 50! Bleh. You look adorable!
ReplyDeleteI'm not a fish eater...unless it's deep fried catfish, which is just so healthy for you :). I'm always impressed with your ability to be so resourceful. Reminds me a lot when I was a kid as my mother did all those things you do (canning, jellies, etc).
Glad you're out running and hitting the trails. LOVE fall!
Good to hear from you, Jill!! We could sit down and eat some fish and chips- a good old fish fry would be OK with me! I love that stuff and it's a good think I don't have a deep fryer.
DeleteI'm trying to prepare myself for 50~ Notice I didn't smile TOO big. =D I'm just starting to embrace this ..
"Muffin top biceps" hahaha! I need to get some arm warmers just in case the temps every get below 70 here. So cute! I've never heard of canning your own tuna, but that is really cool. We freeze our own fish; so kind of the same thing?
ReplyDeleteYES!! Muffin top biceps do happen :P :D The fish you get down there would be tasty, and the freezer works too! Until it fills up... haha . So glad to hear from you!
DeleteWow - I have never even heard of canning your own tuna but I bet it's delicious. And I LOVE armwarmers AND fall running, though we seem to be turning the corner to just plain cold here now...
